Sour Cream Bacon Cheese Dip


3 spring onions, chopped fine
1 cup sour cream, room temperature
1/2 cup mayonnaise
150g tasty cheddar or firm sharp cheese of choice, grated
1 tsp smoked paprika (optional)
½ cup cooked bacon of choice, chopped into little bacon bits once cool, divided
¼  cup chopped chives


  1. In a bowl add the spring onions, paprika, grated cheese, mayonnaise, sour cream, ½ of the bacon bits and combine and chill for at least 2 hours.
  2. Serve with the top dressed with the chives and the rest of the bacon bits with your favourite Gluten-free Bluebird chips.
