Pineapple Brownie (Vanessa Baxter)

Ingredients

1 pack 300g FF Brownie Mix
100g Dark Chocolate (inc in the box)
2 eggs, lightly beaten
60g butter
1 cup finely chopped fresh pineapple (or crushed pineapple) drained

Directions

Preheat the oven to 160 C fan forced
Grease a 19cm square pan or rectangular brownie pan, and line with baking paper.
Mix together 50g chocolate pieces and butter in a small bowl and microwave for around 1.5 minutes.  Remove and stir until the mixture is smooth and combined.  If you do not have a microwave, then you can melt the butter in a small pan. Turn off the heat, add the chocolate and stir to melt and combine with the warm butter.
Add the eggs, making sure you stir constantly as you add them.
Finally add the brownie mix and stir to combine into a smooth cake mix.
Stir through the chopped, drained pineapple and the remaining chocolate.
Dollop the mixture into your prepared pan. Smooth out the top.  Lick the spoon.
Bake for 24 minutes.  Remove from the oven and allow to cool for 10 minutes before trying to turn out or slice.
