Ingredients
½ cup dried pitted dates
½ cup cranberries
2 Tbsp Healtheries White or Black Chia Seeds
½ cup cashew nuts
¼ cup coconut
¼ cup pumpkin seeds
2 Tbsp cocoa powder*
2 Tbsp soaking water from the dates and cranberries
2 Tbsp melted coconut oil
50g Healtheries 99% Sugar
Free Dark Chocolate BakingBits
Desiccated coconut, Freezedried raspberry powder or Cocoa powder to roll the balls in.
Directions
- Soak the dates and cranberries in recently boiled water for 10 minutes and then squeeze out thoroughly reserving the soaking water.
- Place the squeezed fruit and all of the remaining ingredients into a food processor and blend until well combined and the mixture stays together when rolled between your fingers.
- Using a tablespoon, roll into balls and then coat in either coconut, freeze-dried aspberries or cocoa.
- Store in an air-tight container in the fridge for up to one week.
