Ingredients
Vary the types of fruit used depending on the season.
- Summer fruit salads may include watermelon, blueberries, strawberries and raspberries.
- Winter fruit salads may include diced pear, kiwifruit and mandarin.
- Pineapples, grapes, apples and bananas are also available all year round.
Method
- Dice four cups of assorted fresh fruit.
- Scrape seeds from 1/2 a vanilla pod then mix them with 1/4 cup of orange juice. If you don’t have a vanilla pod use 1/2 tsp of vanilla essence.
- Divide into bowls then top each serve with 2 heaped tablespoons of unsweetened Greek yoghurt.
