Chicken Fried Rice

Ingredients

  • 3-4 boneless, skinless chicken breast, cut into thin strips
  • 3 Tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely minced
  • 2 cups fresh snap peas
  • 4 1/2 - 5 cups cooked rice
  • 2 cups frozen carrot and pea melody
  • 3 Tablespoons GF soy sauce

Directions

    1. In a large frying pan heat a tablespoon olive oil over medium heat.
    2. Season chicken with salt and pepper, place into heated pan. Cook about 2 minutes, or until lightly golden in color.
    3. Add onion, garlic and snap peas into pan. Cook for 2 minutes, or until onions are tender.
    4. Add remaining olive oil, cooked rice and frozen vegetable melody. Heat until dish is piping hot.
    5. Add soy sauce and mix evenly throughout entire dish.
    6. Serve immediately
