Apple Berry Crumble

Ingredients

  • 3 cups stewed apples, drained
  • (Frozen berries are optional!)
  • ½ cup rice flakes
  • ½ cup brown sugar
  • ¼ cup gluten free flour or baking mix
  • 1 teaspoon mixed spice
  • 50g cold butter

Method

  1. Put the fruit in a pie plate or shallow dish
  2. Combine the remaining ingredients and cut in butter until mixture is crumbly
  3. Sprinkle topping over the fruit, then microwave on High for 8-12 minutes
  4. Leave to stand for 10 minutes, then serve with cream or ice-cream

To make this recipe dairy-free, serve with a fruit sorbet or coconut ice cream/yoghurt. Replace butter with dairy-free spread. This recipe is nut-free by default.
