Zucchini Chocolate Cake

INGREDIENTS

1 ½ cups butter
3 Tbs sugar
2 large eggs

1 cup unsweetened pureed fresh zucchini or apple sauce
1 1/2 cups any GF flour
1/2 cup cocoa
1/2 tsp xanthan or guar gum
1/4 tsp salt
1 Tbs gluten free baking powder
1/2 tsp baking soda
1/2 cup chocolate chips

DIRECTIONS

  1. Cream the butter and sugar together
  2. Add and beat eggs well
  3. Add the rest of the ingredients and beat until smooth
  4. Pour into greased and floured baking tin.
  5. Sprinkle with half a cup of chocolate chips.
  6. Bake at 350 degrees F (180C) for 45 minutes.
