Woodside Paleo Lettuce Wraps

Ingredients

Large leaf lettuce
Leftover roasted/grilled meat (such as chicken, turkey, lamb, beef)
Leftover roast veg, chopped small (such as pumpkin, parsnip, eggplant, courgette, peppers)
Thinly sliced raw veg (such as cucumber, peppers, tomato)
Big wedges avocado
Salt & Pepper
Dijon mustard
Homemade Aioli or GF store bought Mayo

Directions

  1. Lay a large piece of parchment paper on the counter. In the middle overlap some large pieces of lettuce as long as you want your wrap, leaving at least an inch of parchment at either end.
  2. Pile up your meat and veg and season well. Liberally dollop mustard and aioli/mayo on top. Place another light layer of lettuce leaves on top.
  3. Roll the parchment tightly over the wrap like you would a big roll of sushi.
  4. Twist either end so your filling doesn’t fall out. Cut the wrap in half and serve.
