Southwestern Penne Salad

Ingredients

  • 1/2 pound whole wheat or gluten free penne
  • 1/2 15-oz can black beans, drained and rinsed (about 1 cup)
  • 1/2 cup chopped red bell pepper
  • 1/2 cup frozen defrosted or fresh corn kernels
  • 2 teaspoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon salt

Directions

1. Cook the pasta according to package directions. Then Drain and set aside.

2. Meanwhile, make the dressing by whisking together the lime juice, olive oil, honey and salt.

3. Toss together the warm cooked pasta, beans, pepper, corn and also the dressing. Then serve warm.
