Orange biscuits

 Ingredients

  • 175g butter
  • ½ cup sugar
  • 1 tablespoon orange juice
  • ½ cup GF flour (we used Horleys)
  • ½ teaspoon GF baking powder
  • ½ cup rice flour
  • 1½ GF cornflakes, rice or quinoa puffs
  • Orange rind (for decorating)

Icing

  • 1½ cups GF icing sugar
  • 2 tablespoons orange juice

Method

  1. Preheat oven to 160C (slow oven)
  2. Cream butter and sugar. Add orange juice and flours (mixed with baking powder) and cornflakes
  3. Place teaspoonful’s onto a cold baking tray (lined or greased)
  4. Bake slowly for 10-15 minutes
  5. Ice with orange icing and sprinkle with finely grated orange rind

Icing:

  1. Sieve icing sugar into bowl
  2. Add orange juice and mix to thick paste
  3. Warm over pan of hot water to spreading consistency
