Orange biscuits
Ingredients
- 175g butter
- ½ cup sugar
- 1 tablespoon orange juice
- ½ cup GF flour (we used Horleys)
- ½ teaspoon GF baking powder
- ½ cup rice flour
- 1½ GF cornflakes, rice or quinoa puffs
- Orange rind (for decorating)
Icing
- 1½ cups GF icing sugar
- 2 tablespoons orange juice
Method
- Preheat oven to 160C (slow oven)
- Cream butter and sugar. Add orange juice and flours (mixed with baking powder) and cornflakes
- Place teaspoonful’s onto a cold baking tray (lined or greased)
- Bake slowly for 10-15 minutes
- Ice with orange icing and sprinkle with finely grated orange rind
Icing:
- Sieve icing sugar into bowl
- Add orange juice and mix to thick paste
- Warm over pan of hot water to spreading consistency
