Moroccan Rice Salad

Ingredients

1 1/2 cups long grain brown rice
6 Green onions (finely chopped)
1 Tbsp lemon rind (finely grated)
1/3 cup Toasted almond (finely chopped)
1/3 cup Lemon juice
1/3 cup Fresh dates (chopped)
2 Tbsp mint (torn)
2 tsp Ground coriander
2 tsp Ground cumin
1/4 cup Olive oil

Directions

  1. Cook rice and drain well . (Follow the directions on the package for cooking).
  2. Place warm rice in a large bowl and add all remaining ingredients, except for the oil. Season to taste with salt and pepper.
  3. Toss to combine, adding just enough oil to moisten rice.
  4. Serve salad warm or at room temperature.
