Ingredients
450 g ripe tomatoes, chopped
1 tbsp chopped fresh basil
1 tbsp chopped fresh marjoram
1 tbsp chopped fresh italian parsley
2 cloves garlic, finely chopped
1 tbsp balsamic vinegar
1 tbsp olive oil
1 tsp lime or lemon juice salt and
freshly ground black pepper, to taste
8 × 2.5-cm-thick croûtes, toasted
Directions
Place tomatoes, herbs, garlic, vinegar, oil and juice in a large mixing bowl. Season with salt and pepper and mix well. Place the toasted croûtes on a serving platter and spoon the tomato mixture over the top. Serve at room temperature.
