Fruit Sponge Pudding

INGREDIENTS

Any cooked fruit in season or tinned/frozen fruit
150g GF self-raising flour/baking mix
85g butter
125g caster sugar
1 large egg
3 tablespoons milk
1 teaspoon vanilla
1 teaspoon GF baking powder

DIRECTIONS

  1. Sift flour and baking powder into the bowl.
  2. Add all the other ingredients and mix using an electric beater. Gradually increase mixer to maximum speed and beat for 1 minute.
  3. Put fruit into the bottom of a greased casserole dish and pour mixture over the top
  4. Bake at 180°C for approximately 30 minutes
