Crunchy Lemon Muffins


  • 2 cups baking mix (we used Bakels GF Health baking mix)
  • 1 teaspoon GF baking powder
  • ¾ cups sugar
  • 75g butter
  • 1 cup milk
  • 1 egg
  • Grated rind of one or two lemons


  • ¼ cup lemon juice
  • ¼ cup sugar


  1. Preheat oven to 200º
  2. Mix the flour and sugar together into a bowl
  3. Melt butter and milk, add egg and lemon rind. Beat well with a fork
  4. Add liquids to dry ingredients
  5. Combine only until the dry ingredients have been lightly dampened, but not thoroughly mixed
  6. Coat muffin pans with spray oil, then spread the mix between them
  7. Bake for 10 minutes


  1. Stir together the lemon juice and sugar without dissolving the sugar
  2. Drizzle over the hot muffins as soon as they leave the oven

Leave muffins to cool and syrup to harden.
