Ingredients
- 2 cups baking mix (we used Bakels GF Health baking mix)
- 1 teaspoon GF baking powder
- ¾ cups sugar
- 75g butter
- 1 cup milk
- 1 egg
- Grated rind of one or two lemons
Glaze
- ¼ cup lemon juice
- ¼ cup sugar
Method
- Preheat oven to 200º
- Mix the flour and sugar together into a bowl
- Melt butter and milk, add egg and lemon rind. Beat well with a fork
- Add liquids to dry ingredients
- Combine only until the dry ingredients have been lightly dampened, but not thoroughly mixed
- Coat muffin pans with spray oil, then spread the mix between them
- Bake for 10 minutes
Glaze:
- Stir together the lemon juice and sugar without dissolving the sugar
- Drizzle over the hot muffins as soon as they leave the oven
Leave muffins to cool and syrup to harden.
