Ingredients
- 3 cups Goldies Gluten Free Pancake Mix
- 2 cups your preferred milk
- 1/2 cup vegetable oil
- Approx 1.5 cups fruit of choice (tinned peaches drained, sliced apples, or blueberries)
- Butter or cooking spray for greasing
Method
- Preheat your oven to 180°C (160°C fan-forced) and generously grease a large baking dish.
- Prepare the batter by combining the Goldies Pancake Mix, preferred milk, and oil in a large mixing bowl. Add a dash of cinnamon if you wish. Using a whisk or electric beaters, mix until the batter is completely smooth with no lumps remaining.
- Assemble the bake by pouring the batter into your baking dish, spreading it evenly. Arrange your chosen fruit evenly across the surface, gently pressing larger pieces like apple slices slightly into the batter.
- Bake for 30-40 minutes until the top is firm to the touch and beginning to turn a light golden brown.
- Serve warm with a generous dollop of coconut yoghurt or a scoop of vanilla ice cream.
